Milk Kefir Grains
Called the champagne of dairy drinks, milk kefir is an effervescent, probiotic beverage that is delicious on its own or can be sweetened with honey or maple syrup. Kefir is also a great ingredient in baking or making dressings and sauces. You can use cow, goat, or even soy milk.
Once you rehydrate these freeze-dried grains, they will turn your milk into kefir in just about a day!
** A note about rehydrating and acclimating the grains:
It may take up to 7 days for the grains to become active. Once the grains are active, it may take 2-3 weeks for the kefir to fully balance in smell and taste.
During this time, he kefir will be extremely pungent, sour, yeasty, bitter, cheesy, sweet, or some strange combination of those smells and tastes when the grains first wake up. Milk Kefir Grains are incredibly strong and they will balance out. If the grains do not receive enough milk or the temperature is off or inconsistent, then the kefir will be incredibly funky.
