We'll start out offering our most popular class once the Castro Valley Marketplace is open in March 2020:
Three Cheeses in Three Hours at CVM
Learn to make three distinct and delicious types of cheese: mozzarella, chèvre (fresh goat cheese) & burrata. During the class, you'll enjoy an extraordinary sampling of local and sustainable wine in this fast-paced, hands-on workshop. This three-hour class walks you through the history of cheesemaking, important facts about milk quality and differences as well as the complex biology and chemistry behind turning milk into tasty cheese curds and protein-rich whey.
Upon arrival, you'll be greeted with a gorgeous glass of bubbly to pair with the fresh goat cheese we've prepared and flavored for you.
Once everyone is settled, we'll jump right in and demonstrate (in a time-lapse fashion) how to craft a fresh, tangy goat cheese along with tips to make your goat cheese appear as several different types of artisanal cheeses through various preparation techniques. You'll even learn to work cheesemaking into a busy lifestyle.
Next, we'll separate into groups of 4-6 students; each group will start with a gallon of milk and finesse it over the course of the class into rich, stretchy mozzarella. Enjoy some of your finished mozzarella, while we turn the rest into creamy, dreamy burrata. There's just nothing like fresh mozzarella and burrata which have never been refrigerated!
Indulge in some of the most decadent cheese and wine the world has to offer while you learn about how to taste and craft your own bloomy-rinded cheese (like brie and camembert) then learn to pair it with a sommelier-curated and terroir driven collection of fabulous wines.
Explore the world of bloomy-rinded cheese and the great variety available within this category with a hands- and mouths-on cheesemaking workshop and tasting tour of our favorite artisan cheeses, led by FARMcurious founder, Nicole Easterday. Then learn to pair these delightful cheeses with small production wines, complete with sommelier-led educational tasting. An experience to remember!

Brie seems like the type of cheese that would be made by magical little elves in France. But it's actually one of the easiest cheeses to make at home with very little special equipment required! We'll show you how in this hands-on class, complete with edible homework.
* Explore the World of Bloomy-Rinded Cheese
While we wait for the curd to set, we take a truly decadent tour of exquisite bries paired with wines. Experience the variety available in this one cheese - from ash rinds to added ingredients like herbs or mushrooms, to using different milks like goat, sheep, or cow - there's so much to taste!
Nicole will be your guide throughout the cheese tasting, discussing what you're experiencing and how to recreate it as a home cheesemaker.
* Learn to Expertly Pair Your Cheese with Wine
Cheese and wine go hand-in-hand and this class was designed to celebrate their marriage. Learn how to do a beautiful terroir-driven pairing along with some stories behind excellent wines.

Instructor: Both workshops are taught by Nicole Easterday, the founder of FARMcurious. Nicole is an engaging teacher who encourages a fun, social environment while she explains what’s happening in a very down-to-earth format.
