While using a starter culture will aid in maintaining crispness of vegetables and achieving a desirable flavor, a starter culture is not a replacement for salt. If you are interested in creating lower salt vegetable ferments, you may want to use this starter culture, with the understanding that salt is still necessary for ideal texture and taste.
