Crafting Brie & Camembert at Home
Enjoy a whirlwind introduction to cheesemaking with a focus on brie & camembert while sipping luscious wine and sampling decadent cheese.
We'll inoculate milk with cultures then proceed through ripening, churning and draining the curds. We'll cover the fascinating history and chemistry of cheese along with aging conditions, breathable wrappings, vegetable ash, ripeness and more. Each student leaves with ‘edible homework’ - a cup of curds to age into the perfect brie over the following weeks with our online guidance.
Each participant takes home a freshly made baby brie wheel to age along with instructions to do it all again on your own. This class is an excellent introduction to cheesemaking or, even better, a 'next step' for those who've already made yogurt, ricotta, mozzarella or chevre.
Ticket price includes instruction, tastings, recipes and edible homework.
Supplies Required: Nothing is required but feel free to bring your own snacks and beverages if you like.
