About the product:

The ideal solution for anyone who’s a little creeped out by the fuzzy stuff that can grow on top of an open fermentation system (like a bucket or crock), this little set locks out the air and all the yeast and mold that come with it. Carbon dioxide escapes through the top of the airlock but nothing is allowed in.

What type of jar does this fermenting set fit?

The lid fits onto any wide mouth mason jar (like Ball, Mason or Kerr).

If you’re outside the US and want to try to match them up with jars you have, they fit the wide mouth U.S. Mason jars which have a 3 inch (76 mm) inner [3 3⁄8 inch (86 mm) outer] diameter regardless of volume of the jar. Many European jars have lug threads instead of the continuous threads of the US Mason jars so be sure the threading on the rim is continuous (uninterrupted). It’s my understanding that you can get Ball jars in Europe.

    Just downloaded the recipe booklet today. I chopped all the ingredients for fermented salsa and loaded up the canning jar. Now it’s on the counter for 2-4 days. SUPER EASY to set up. I’m so excited about my ReCAP lids!

    I purchased this kit at the end of December. I tried some cauliflower, but I think I opened it too soon. It was so salty is was inedible. However, the same day I packed the cauliflower, I packed some fresh green beans with pickling spice and some garlic cloves. That was on January 1, 2015. I opened it last night (04/07/15) and, success! They are fermented and taste wonderful. The pickling spice comes through as does the garlic. Moral of the story, patience is its own reward. I realized that it takes about four months to get the pickled flavor. I had opened the cauliflower shortly after a month and there was no pickled flavor, just the salt. You really need to wait and be patient. I am ordering another set and I am going to try something different. I currently have cabbage fermenting. That will take another couple of months before its ready to eat. My surprise at this entire process is just how simple it is.
